RightFit Recipes | A Healthy (and super easy) Taco Recipe

Craving Mexican, but don’t want to derail your diet and fitness goals? Here’s how to prepare the perfect a guilt-free taco recipe.

Taco Zucchini Boats

Serving Size: 4 people

Ingredients:

Taco Zucchini Boats• 2 medium-sized zucchini cut in half (long way) and scored

• 3 oz tomato puree sauce (no salt or seasoning added)

• ½ cup mild or medium salsa

• 4 cloves garlic, minced

• 1 small onion, chopped

• 1 medium avocado, sliced

• 1 tsp cumin

• 2 tbsp chili powder

• ¼ cup chopped cilantro

• 1 tbsp paprika

• salt and pepper to taste

Hers:

4 oz lean organic beef | 2 tsp vegan shredded mozzarella cheese | Calories: 346 | Fat: 18g Carbs: 17g Protein: 32g

His:

6 oz lean organic beef | 2 tsp reduced-fat pepper jack cheese |Calories: 450 | Fat: 21g Carbs: 16g Protein: 50.5

How To:

• Preheat oven to 400 degrees.

• After cutting the zucchini in half (long way), scoop out the insides with a spoon and place the insides to the side.

• Once the oven is done preheating, place the zucchini in the oven for 10-15 minutes. Depending on how thick they are, you want the  zucchini to become softer and semi-baked, NOT completely cooked!

• In a large bowl, place all the meat with salsa, tomato sauce, chopped onion, garlic, and spices. Mix everything together.

• Once the zucchini has cooked for 15 minutes in the oven, remove pan.

• Carefully pack the meat mixture into each zucchini boat. Two are his and two are hers.

• Put the reduced-fat pepper jack on his and the vegan shredded mozzarella cheese on hers.

• Place back in the oven and cook until the cheese is completely melted and the zucchini is soft.
